Grilling Season is Open!
Busy weekend over here! Golf tournament for my husband, my parents are visiting and a 13th birthday party. I’d love a week of easy dinners because I know my energy will be zapped. It helps that we’ll head out to dinner for birthday sushi one night.
Those of you who took The Smart Meal Plan Formula in January know about my “one thing” philosophy. Today, I tackled my refrigerator and cleaned it out! It’s refreshed and ready for the week ahead, almost like me! I’m teaching the course again in September, so jump on the waitlist to be notified when doors open.
SUNDAY
Grilled skirt steak fajitas with a big mixed kale and romaine salad. I’m adding drained garbanzos, cherry tomatoes, cucumber, pickled red onion and avocado to the salad. Super simple salad dressing to toss it up, with lime juice instead of vinegar and a dash of cumin.
MONDAY
My youngest turns 13 today. We are officially overrun with teenagers! Sushi for dinner. We’ll celebrate and then turn to birthday homework. If you’re cooking at home, think about this simple miso soup with sprouted tofu added to the mix.
TUESDAY
This week, I have an Instant Pot Cooking class for 8th graders at my children’s school. It’s a week of “fun classes” for the kids since they couldn’t take their D.C. trip this year. Quick lamb ragu with pasta, polenta or mashed potatoes.
WEDNESDAY
Chicken noodle soup with a double broth (which is when you poach chicken in chicken broth). One and done! Throw together a salad and toast some crusty bread if you want! You can use gluten-free noodles, or stir in some cooked Jasmine rice at the end instead of noodles. Make it super easy on yourself and grab some frozen pre-cooked rice at the store!
THURSDAY
I’m craving my friend Pamela’s glazed wild salmon. Serve it with steamed broccoli and kale caesar.
FRIDAY
Soy honey steak kabobs on the grill! If you’re in the mood for weekend entertaining, start off with Texas caviar and make a strawberry smash.
