When it’s drizzling all day and bone chilling cold, there’s nothing like grilled cheese and tomato soup. The sliced brioche bread from Trader Joe’s is the perfect vehicle for grilled cheese (if you’re not gluten free). My choice for GF bread for grilled cheese is Glutino white bread. My kids will have theirs with American cheese slices and mine will be goat cheese and pesto.
MONDAY
My kids requested orzo with marinara, which couldn’t be easier. No recipe necessary! Use Rao’s marinara, or use this easy red sauce recipe. I have broccoli and carrots to use up from our Farmhouse Delivery and will toss them with some olive oil and salt and roast them at 400 degrees.
TUESDAY
I’m teaching a Valentine’s class tonight, so I’ll leave dinner in the slow cooker for my troops. Pork Chile Verde is easy, flavorful and comforting. Serve with warm corn tortillas and top with avocado slices and jalapeño slices.
WEDNESDAY
Valentine’s Day! For breakfast, I’ll make pink smoothies (lots of strawberries and a little banana, tangerine juice and hemp hearts). Dinner will be my new favorite Instant Pot Beef Stew (gluten-free and Whole30). I can’t post the recipe just yet — I’ll be teaching and perfecting it in classes this month. But for an easy weeknight Valentine’s dinner, I’d suggest tri tip with Chinese black bean sauce or individual servings of this phyllo-topped chicken pot pie. For dessert, healthy chocolate truffles or this delicious looking Silver Palate chocolate cake. You might just want to mix up a couple of these for you and your beloved.
THURSDAY
By the end of the week, I’m worn out. What about you? Let’s cook something super easy. How about whole chicken in the crock pot. You can cook it exactly as the recipe reads, or rub the skin with my homemade taco seasoning. Serve with a big green salad with super simple salad dressing and maybe small microwave baked potatoes with your favorite toppings.
FRIDAY
What’s your usual Friday routine? I’m trying to tailor my meal plans so they’re as helpful as possible and I’m curious if any of you cook on Fridays? Pipe in here, people. I love having soup on Friday because the leftovers can be warmed up for lunch over the weekend. Super fast miso soup, with sushi picked up from Whole Foods or Central Market, is an easy and comforting meal if you’re at home. It’s actually Chinese New Year tonight, so you could also make longevity noodles or sesame noodles to celebrate the night.
SATURDAY
Date night at home couple happen (if you didn’t get a chance to celebrate Valentine’s Day on Wednesday). Set the table and make a big batch of carbonara, garlicky greens and warm up some crusty bread.
