Weekly Meal Plan // February 18-23

No school (and no homework!). It looks like a rainy day in Houston, and a cozy baked casserole sounds perfect. Skinnytaste has a zucchini rollatini that sounds delicious. I’ve also made Alexandra Kitchen eggplant involtini many times. To be honest, my kids don’t love this dinner, so I’ll probably make a very simple side of orzo and red sauce for kiddos. Salad on the side.

TUESDAY

Back to school after a 4-day weekend. Not nice. Let’s make something “stupid easy.” Chicken salsa verde will work nicely. If you indulged this weekend, serve it over salad greens with super simple salad dressing. Slices of avocado and radish, black beans, cilantro and a creamy jalapeño ranch dressing would also work.

WEDNESDAY

We have golf lessons and ortho appointments this afternoon, but not a heavy rotation of late night sports. I’m making my friend Izzah’s recipe for Coconut Chicken Curry with Potatoes. My mouth watered just reading the recipe. I may try to adapt the recipe for my Instant Pot, or I’ll make it in a dutch oven on the stove. My kids will love this, especially dished up over basmati rice. I may add some spinach to the mix, we’ll see.

THURSDAY

We have a busy night and I don’t want to create a huge mess because I’m teaching a class on Friday morning. Instant Pot Picadillo to the rescue. Serve it over rice, stuffed in baked potatoes or on top of spaghetti squash.

FRIDAY

It was a short week, but sometimes that’s even more tiring. Let’s go for easy grilled burgers and a night at home. I love Ina’s recipe, if you want to switch out the blue cheese for cheddar more power to you.

    Hi Marcia! Love the sound of picadillo BUT we don’t like green olives. Could you use Kalimantan or another substitute?

      Hi Anne! You could leave them out entirely. Just double the capers to get the flavor of the brine. Let me know how it goes!

      Sorry that was confusing! I’m Insta I was trying to tell people to go to this week’s meal plan *or* make the salsa verde chicken. Didn’t totally make sense when I reread it! You can find the recipe if you search “salsa verde chicken”. Let me know if you can’t find it!
