A Week of Simple Meals
We are moving into Farm Girls Supper Club week, which means I’ll be shopping, prepping and cooking half the menu for 90 attendees. If you’re the praying sort, I wouldn’t mind a shout out. This dinner is a labor of love. The best way I can describe it: It’s like creating a restaurant for one night only. There are so many people who have had a hand in the creation of this event and my two partners and I have fielded hundreds of emails and texts for the past few weeks. If I owe you a return email or phone call, I promise to catch up by the end of the week. I can’t wait to share photos with you all.
SUNDAY
My in-laws have been in town this weekend and we visited the farmer’s market and did a tour of cheese and wine spots, plus a quick BBQ stop thrown in for good measure. It’s time for a healthy dinner, so I’m cooking up a big batch of kale and white bean minestrone that my family can nosh on all week long.
MONDAY
I need another big batch meal that my crew can reheat this week. Tea for Turmeric’s chana masala is flavorful and easy, and super delicious over rice. I plan to make a double or triple recipe to be sure we have leftovers.
TUESDAY
Whole chicken in the slow cooker. Roast some potatoes or broccoli, toss a salad and call it a night.
WEDNESDAY
I’ll be at Farm Girls cooking up a storm. My family can use leftover chicken for quesadillas, heat up chana masala or soup. If you want another idea for tonight, try Molly Baz’s broccoli bolognese.
THURSDAY
I’m back home to teach a fun birthday cooking class today (hope Farm Girls was a success!). Dinner will be something easy and comforting, like penne with pesto. You could make this Ligurian style with the addition of some cooked and quartered small new potatoes.
FRIDAY
Good night, peace out and put your feet up. It’s Friday and I’m NOT cooking. I’ll likely be in front of a movie with a bowl of popcorn or asleep at 8pm. But if you’re cooking or entertaining at home, consider making chili-lime flank steak or honey hoisin pork tenderloin on the grill.
