Let’s make this a quick one! Our dinner is in the oven and I’m quickly mapping out the week ahead. One of my kiddos is throwing a ball in the front yard, one is coming home from a softball scrimmage (and will surely be “starving”) and the oldest is sitting across from me on the couch asking when dinner will be ready. I also think she may be snapping photos of me, so there’s that. (Insert eye roll here.)
SUNDAY
Weeknight lasagna, pan-roasted broccoli, green salad with super simple salad dressing.
MONDAY
Egg roll bowls, edamame and steamed jasmine rice on the side. I asked my oldest daughter if I could hand her the recipe and have her make dinner. I got the idea of the teenager-made dinner from a post on Mom’s Kitchen Handbook, and I think it’s a great one! There’s a fair amount of slicing and dicing in the recipe, so I’ll help with prep and then hand the reigns over.
TUESDAY
Salsa verde chicken tacos. This dinner is beyond easy and takes 10 minutes to throw together. You know what to do here, people: Guacamole, pickled red onions if you are so inclined, jalapeños, cilantro, etc. We have a ton of kale growing in our garden, so I’m planning a big kale salad with pepitas, apples and garbanzo beans on the side.
WEDNESDAY
Chicken kabobs picked up from Central Market (if you’re not in Texas, buy good quality chicken kabobs from your favorite butcher, or make your own). Dress them up with a side of chermoula and a Greek salad. When I make salad with ingredients like feta or bleu cheese for my family, I sometimes make a “decomposed” salad. I put the ingredients on a platter in rows and let my people pick what they want (as long as they’re getting some vegetables on their plate, all is good). Dressing stays on the side. Look for good Greek, French or Israeli feta stored in brine. Don’t even think about buying pre-crumbled or low-fat feta.
THURSDAY
We have dinner out to celebrate our birthday girl (who hits double digits today). She wants a sushi dinner, which sounds great to me! If you’re cooking at home, this cheesy cauliflower pasta sounds delicious. Serve something green on the side, like a bunch of lemony sautéd spinach.
FRIDAY
We have a party tonight and I’ll be cooking all-day-every-day this week. Happy to hang up my apron for the night! Here are some ideas for burger night at home.
