An Easy December Meal Plan
I have the December sniffles, so tonight will be brief. After a busy weekend of shuffling kids and making sure they’re on track for finals and homework, I am more than ready to call it a day! I hope you have a good week ahead.
MONDAY
There’s a quart of frozen weeknight bolognese in my freezer and about half a dozen sweet potatoes from our Farmhouse Delivery. I plan to slow-roast the sweet potatoes (thank you, Smitten Kitchen for that genius idea!) and warm up the meat sauce on the stove.
TUESDAY
It’s clean-out-the-freezer week at our house! We have a couple filets of frozen wild Alaskan cod from Trader Joe’s, which is perfect for quick weeknight fish tacos. If we don’t feel like fish tacos, homemade fish sticks are easy to make and always a delicious throw back. Make a tartar sauce or herbed yogurt sauce on the side, and serve with lemon wedges and a big green salad.
WEDNESDAY
We’ll be busy baking up a storm of Christmas cookies, peppermint bark and rocky road fudge tonight, so a simple pasta dinner is in order. Carbonara with greens sounds satisfying and easy. If I had more time tonight, I might opt for Martha Stewart’s macaroni and cheese recipe. It feeds a hungry crowd! File that one away if you’re planning any December ski trips, ie the perfect excuse to carb load.
THURSDAY
Easy buffalo chicken wings are Whole30 and delicious, with a simple clean-up to boot. Carrot and celery sticks with ranch are an easy vegetable side.
FRIDAY
Tonight I plan to pick up sushi and make a pot of super fast miso soup. We’ll have a night at home watching Christmas movies and celebrating the end of midterms!
