Time for a Reset
Hi everyone! We’re making this weekly meal plan fast today because we’re deep in house projects. Couldn’t let quarantine go by without some attic organization and closet clean outs. It’s also my youngest’s birthday tomorrow, so we have work to do! After tomorrow, we’re starting a Whole30 reset, teenagers included, so this weekly meal plan is full of Whole30 dinners.
SUNDAY
The birthday girl has requested weeknight chili with all the fixings (sour cream, cheese, sliced green onions). We’re making our family’s favorite semi-homemade birthday cake: Miss Jones Bakes vanilla cake mix with homemade chocolate frosting. Ice cream on the side (before tomorrow’s reset starts!).
MONDAY
Cauliflower gnocchi and sun-dried tomato pesto. If you don’t want to make the pesto, Rao’s marinara works too! Green salad with super simple salad dressing on the side.
TUESDAY
Taco bowls! We’re making chicken tinga in the Instant Pot, Mexican cauliflower rice and kale guacamole. Add any other healthy taco bowl sides, like chili lime roasted vegetables.
WEDNESDAY
Whole30 Steak Stir Fry sounds delicious! Use any veggies you have on hand: broccoli, carrots, bell peppers, zucchini, etc! If you want a side, make coconut lime cauliflower rice.
THURSDAY
Sheet pan sausage and peppers. I’ll add some small red potatoes that I par cook ahead of time. Either boil them in well-salted water for five minutes or microwave for a few minutes. You could also add small cubes of sweet potato to this and it would be super tasty. If kids don’t want their sausage mixed with veggies, keep a couple whole on the side of the pan.
FRIDAY
Breakfast for dinner! Healthy turkey chorizo for the win. Oven roasted breakfast potatoes would be perfect with this! Or just make scrambled eggs and call it a night!
