SUNDAY
Skinnytaste Sloppy Joe’s. This is my favorite homemade sloppy joe recipe, and it’s relatively fast. Perfect for a cold and cozy Sunday. If you don’t want it on a bun, serve it with cauliflower rice or over sautéd spinach. We’re serving ours with a big salad on the side dressed with my super simple salad dressing and homemade kale chips. In the interest of time, skip the seasoning on the kale chips and just toss them with some olive oil and sea salt.
MONDAY
Tomato soup and grilled cheese for kiddos. I have two versions of tomato soup I make. This one made with coconut milk and this one made with milk or cream. When making the dairy version, I typically use 1/4 cup heavy cream and add a couple diced carrots and a diced stalk of celery to the sautéd onions when they cook. The best cheese for grilled cheese sandwiches is old school slices of American cheese — I buy Horizon organic ones to feel slightly less guilty.
TUESDAY
Asian lettuce wraps with ground chicken, steamed edamame and roasted broccoli.
WEDNESDAY
Jambalaya with chicken and andouille sausage. You can make your own rice, but the recipe calls for pre-cooked rice which makes it super speedy to put together. I’ll use Trader Joe’s organic cooked brown rice, you can find it in the freezer section.
THURSDAY
Excited to try this recipe for General Tso’s chicken from Skinnytaste. I’ll use tamari instead of soy sauce (tamari is gluten-free, you can also substitute coconut aminos to make it soy-free), and arrowroot flour instead of cornstarch. Arrowroot powder works in the same way as cornstarch (as a thickener)– and it’s what I have on hand. Either one works fine. If you’re on Whole30, use arrowroot flour.
FRIDAY
We have a birthday in the house, and the birthday boy is still deciding on his dinner out. If you want an idea for dinner at home, try super easy salsa verde chicken tacos or buffalo chicken wings.
SATURDAY
Homemade skillet pizza with pesto, tomato sauce, mozzarella and all the fixings. You can also buy pre-made pizza dough at Trader Joe’s, Central Market and Whole Foods.
