Unplugging felt so good this weekend. Aside from some photos of Easter dinner, I took a break from blog posts, Instagram posts and work. I sat outside and read my book, Bad Blood (So good! But reading it is like watching a train wreck!). Went for two walks with my husband. Rode bikes with my family (and no one collided!). Slept in. Laughed with friends. And listened to the podcast above, for the second time. It was a good weekend.
Today is Easter Sunday, and I know not all of you celebrate Easter, but I still want to share a pearl of wisdom from our sermon today. I think it’s universal for all of us: “Search for what makes life full and meaningful. Search, seek and pursue.” Thank you, Dr. Pace!
I hope this weekend, and every day, is full of what makes life meaningful. Soak it up like a sponge and let the water fill your heart to overflow. I’m thankful to have recharged this weekend, because my tank was feeling rather low. Have a great week, friends!
MONDAY
I cooked most of Sunday afternoon, so I want a simple dinner tonight that doesn’t make a mess. I have basil that needs to be used, and I can make a big batch of quick pesto with added kale and arugula greens from my garden. We had enough carbs and sugar today, so I’m opting for spaghetti squash as our base, but you could also make this simple spring pasta with green beans and peas.
TUESDAY
Cauliflower gnocchi with diced ham, sautéed leeks, garlic, peas and olive oil. Here’s a great tutorial for making the Trader Joe’s cauliflower gnocchi, which is sold in the freezer section and often sells out. If you can’t find it, you can opt for this homemade version. I haven’t tried this recipe, so if you make it please send feedback.
WEDNESDAY
If you’re in Houston, watch me on HoustonLife at 1pm! For dinner, I’m making Martha Rose Shulman’s recipe for miso glazed fish. I’d love to make this with Arctic char or wild salmon, but trout or halibut would work too. I usually only marinate the fish for an hour or so. We have a ton of vegetables to use up in our crisper, so I may sauté a pan full of carrots, green beans and asparagus on the side. Or greens and garlic would be good here, too. Rice is optional, but so tasty for soaking up the miso.
THURSDAY
My husband is playing in a golf tournament tonight, so I’m opting for a super simple dinner with minimal cleanup. Sheet pan sausage and peppers is on tap, and if I have extra spring veggies to throw on the pan (like asparagus or green beans) I’ll use them up.
FRIDAY
Our youngest has a birthday today! I’ll have lunch at school with my baby and we’re celebrating at home tonight. Lucky for mom, that entails her favorite Houston pizza delivery and an easy salad. Happy weekend!
