SUNDAY
I’m enjoying some time out of town with my oldest daughter. If you’re cooking tonight, think about making a double batch of vegetarian three-bean chili and freeze half for another dinner down the road. If you prefer something meaty, it could be weeknight chili or white chicken chili.
MONDAY
Back home in Houston and I have a feeling I’ll be tired out. I’m making quick chana masala. My son will want something “extra” on the side, so I’ll warm up some samosas from Trader Joe’s to fill up the growing teenager! If you don’t feel like making basmati rice, buy frozen precooked jasmine or brown rice from TJs.
TUESDAY
Chipotle-rubbed wild salmon tacos! The best part is you can enjoy the salmon without a tortilla if you prefer, and it will be delicious. Planning to make a Mexican slaw on the side (my family loves a creamy slaw in fish tacos).
WEDNESDAY
It’s one of those nights. My oldest will be mentally exhausted after taking the PSAT, we have a college meeting and I have a work webinar at 6pm. Dinner needs to be something I can cook in the early afternoon and keep warm. Instant Pot chicken and sausage gumbo to the rescue! Comfort food that everyone loves! If you want a veggie-based dinner, this pinto posole sounds delicious.
THURSDAY
I’m making a quick dinner and it’s already made and waiting for me in the freezer. Win-win! Cauliflower gnocchi from Trader Joe’s with sundried tomato pesto for the win. When I make the pesto I freeze a batch for a second dinner down the road. Toss an easy green salad with super simple salad dressing on the side.
FRIDAY
We’re eating out tonight, but this roundup of kid-friendly meals has tons of great ideas. Sign me up for chicken teriyaki bowls.
