Sunday afternoons are for enchiladas. I tested a couple gluten-free enchilada recipes tonight, and I’m not sad about it. I’m teaching an enchilada casserole in my Central Market cooking class Wednesday night, and I wanted to test the sauce one more time before class. Spoiler alert: It was delicious. Here’s a similar recipe, but I can’t wait to share mine with you!
MONDAY
One of my family’s favorite weeknight dinners is homemade sushi. It sounds really complicated and fancy, but if you have a rice cooker, it’s beyond easy. Check out my Instagram stories to get a play by play. I let everyone pick their own fillings, including avocado, cucumber, carrots, jalapeño and sometimes sushi grade salmon or tuna. We cut the sushi into slices or just eat them as hand rolls dipped in organic tamari. This is so easy, you don’t even need a recipe. Here’s a handy tutorial to give you a visual. I don’t make prepared sushi rice, I just steam medium grain Cal Rose rice in my rice cooker and spread it thin with a rice paddle. You can order a bamboo mat and a rice cooker from Amazon.
TUESDAY
BBQ pork ribs in the slow cooker are such an easy meal. Sprinkle two racks of pork ribs with salt and pepper. Broil them on the top rack of the oven for 5-7 minutes per side. The heat will break down the connective tissue and tenderize the meat. Sometimes I make my own sauce. But if I’m pressed for time, I’ll add the pork ribs to the slow cooker with my favorite brand of store bought BBQ sauce, Bone Suckin’ Sauce, and cook on low for 6 to 8 hours. You can make this with a simple homemade BBQ sauce. In this version from Gimme Some Oven I prefer to omit the liquid smoke, which ensures it’s gluten free. Serve this with cole slaw, roasted green beans or okra.
WEDNESDAY
Turkey chili, baked potatoes and roasted okra. I’m making the chili with dark meat ground turkey, but we usually make it with ground beef. Tonight I’m teaching a gluten free family meals class at Central Market, so once the chili is made in the afternoon I’ll transfer it to a slow cooker on low. I slice the okra thin and roast it at 400 tossed with extra virgin olive oil and lemon pepper. Stay tuned for the chili recipe, I’ll be posting it soon. If you would like to make your baked potatoes in a slow cooker, wrap each one in foil and place in the slow cooker on low, covered, for 6 hours.
THURSDAY
One of my favorite recipes to teach in class is my sheetpan roast salmon. It’s beyond quick and easy, and if you line your sheetpan with parchment paper the clean up is a dream.
FRIDAY
Burger night! We order grassfed meat from Yonder Way Farm, and I know we have some delicious burger patties ready to grill. Throw these bad boys on the grill with a little salt and pepper and a dash of Worcestershire on top and you’re good to go. Toss up a big salad and dress it with jalapeño ranch.
