When did Sunday become the new Saturday? I crave a weekend that’s a little quieter, a little less focused on youth sports and a lot more focused on recharging with my family. This Sunday, we have an extra golf team practice, a driving lesson and club volleyball. Our church routine hasn’t been very stellar this year, but I have my sights set on the 5pm service at The Story Houston. It’s relaxed and full of concert-worthy music performances. I’ve been saying “no” to more and more weekend events and classes, and I can’t lie it feels GOOD. Time is not a finite resource, and being deliberate about how to spend it is a step in the right direction. Enjoy your weekend, friends!
SUNDAY
Dinner out at La Lucha or the Original Ninfa’s on Navigation after church. Kids will have homework for middle school and high school — that’s another thing I’d like to change about weekends! Who’s with me?!
MONDAY
Yearly mammogram appointment this morning – not fun! But a reminder to you all to make the important appointments, even if you really really really want to skip it. For dinner, it’s meatless Monday Chana Masala from my friend Izzah of Tea for Turmeric. I’ve been craving it ever since I saw her beautiful photos a few days ago. Find garam masala in the spice aisle at most grocery stores. I’m ordering chaat masala from Amazon to check it out, but either one will work in this recipe. Serve with basmati rice, cauliflower rice and if you’d like, Greek yogurt to dollop on top. Some green chutney is never a bad idea, either.
TUESDAY

Use halibut, arctic char or wild salmon. Don’t forget a creamy fish taco sauce to drizzle on top.
WEDNESDAY
Cooking class today and my parents arrive in town! We’ll have homework and club volleyball practice, so I need an Instant Pot dinner that will satisfy the masses. Skinnytaste lasagna soup to the rescue! Salad greens from the garden with super simple salad dressing on the side. I get asked constantly which Instant Pot I use, and it’s this one right here. And it’s on sale for a great price!
THURSDAY
I have a private cooking class group today and we have an afternoon JV tennis match, a 7pm volleyball game across town and visiting grandparents, plus homework! So it’s either going to be another Instant Pot night, some reincarnation of leftovers or takeout. I’m usually spent by Thursday, so there’s a good change we’ll have fajita take out and call it a night! If you want to make fajitas at home, try these easy wonders.
FRIDAY
We’re celebrating a 13th birthday (a day early!) with dinner out. The girls and I are making a classic yellow birthday cake with chocolate frosting for dessert.
