An Easy Weekly Meal Plan
SUNDAY
I’ve decided I need a cooking vacation tonight, how’s that for a meal plan? I’ll give my husband the option to make dinner at home or we’ll go out. If you’re cooking at home and need to use up leftovers, make turkey stock with the carcass. Enchilada casserole with shredded turkey meat would be a hit. Or a healthy turkey tortilla-less soup.
MONDAY
Turkey wild rice soup with leeks, shredded brussels, mushrooms, carrots, celery and garlic. I may add some cream too and a pinch of cayenne or espelette. I don’t have turkey meat left at this point, but I’ll use my super flavorful turkey stock for the base. Garlic bread and a big tart salad would be delicious on the side.
TUESDAY
My friend Kelly Corroon is in town for a trunk show of her amazing bags, luggage and totes at a holiday market. She may need a margarita and some Tex-Mex after being on her feet all day. I volunteer to show her the ropes! I’ll leave ground beef tacos sautéd with homemade taco seasoning for my crew.
WEDNESDAY
It’s a busy cooking class day, so dinner will be Instant Pot Chicken Tikka Masala with basmati rice and sheet pan roasted broccoli on the side.
THURSDAY
I have another cooking class today, and I’ll be teaching some of my favorite easy holiday appetizers. For dinner, it’s sheet pan chicken thighs with green beans and cherry tomatoes. I’ll roughly follow this Pioneer Woman recipe, but don’t plan to use ciabatta. Orzo with Rao’s marinara on the side.
FRIDAY
Today I’ll be on HoustonLife showing you all some delicious holiday appetizer recipes. Tune in to NBC at 1pm. My niece is in town visiting from California, so we may take her out for Texas BBQ. If we’re home, it’s burgers on the grill with spicy sriracha mayo and pickled onions.
