It’s time to meal plan and look at the week ahead. The weekend was full of cooking, eating, laughing and talking with a great group of women. It was a cool and beautiful weekend in Round Top at my 5th cooking retreat and it was so great to share new recipes and some time in the kitchen with new friends.
MONDAY
Busy day getting prepped for my basics series, which starts tomorrow. We have odds and ends of vegetables to use up, so it’s kale and white bean minestrone for dinner.
TUESDAY
I can prep this rotisserie chicken enchilada casserole the late afternoon and pop in the oven for dinner. I’m using Siete cassava tortillas for the enchiladas and serving a big green salad on the side.
WEDNESDAY
Tune in to HoustonLife on NBC at 1pm for some Valentine’s dessert ideas, like this super easy popcorn bark! I know I’ll be tired out tonight after a morning cooking demo and afternoon TV segment, but my youngest has been requesting sloppy joe’s non-stop. I have mine stuffed in a baked potato, and the kids have theirs in hamburger buns with Bubbie’s pickle slices. Roasted lemon broccoli (omit the Parmesan if you’d like) or homemade kale chips on the side.
THURSDAY
Parents night out means a Trader Joe’s cheater dinner. I’m thinking black bean taquitos with some at-least-I-made-guacamole guacamole.
FRIDAY
Valentine’s Day! A long weekend!! Hurray!!! Here’s a Valentine’s Day cook-at-home menu I did for the Houston Chronicle a while back. Cook up a batch of bolognese for your boy (or girl) and call it a night.
