Whole 30 Dinners No One Will Complain About!

SUNDAY
The plan is a quick sauté of long beans and ground turkey. It’s a recipe I taught in detail as part of my Smart in the Kitchen School monthly membership. I’ll share a step-by-step in Instagram stories. The produce I’m using is from the Hope Farms seasonal farm share I tried out last week. Houston friends: they kindly extended the code SITK for 10% off your order! I’m also doing a red curry eggplant similar to this one, but using Thai Kitchen red curry paste. I’ll save this dinner to highlights in my IG. Some kids will have Jasmine rice (cooked from frozen Trader Joe’s packets) and some of us will have cauli rice.
MONDAY
I was telling my family about a Kitchenette Farm cooking class last week and we want to recreate it. It’s a choose-your-own-adventure dinner of parchment paper fish packets. Instead of salmon, we’re using sea bass or another white flaky fish. I’ll see what looks best at Central Market or HEB tomorrow. Dairy-free “pesto” will be on the side, I really should call this a basil sauce, but whatevs. Set out any toppings your family will enjoy: lemon, cherry tomatoes, thin green beans or cut long beans, diced red pepper, herbs, capers, etc. Let everyone add whatever toppings they’d like! Simple salad on the side and maybe some roasted potatoes.
TUESDAY
InstantPot chicken and sausage gumbo. It’s not traditional gumbo, and definitely more of a soup because it’s Whole30, but it’s delicious. I like to make crispy okra to sprinkle on top of each bowl. A scoop of cauli rice will get added to mine! I’ll make this in my Instant Pot at 4 pm, before heading to a 5 pm volleyball game and back-to-school night for upper school. I’ll set it to “keep warm” after it cooks and everyone can eat on their own time.
WEDNESDAY
Houston friends! Bering’s added a few more seats for my cooking class today, grab your seat fast! I’ll teach you all my grilling tips and tricks, and we’ll cook up a delicious menu. No school for us tomorrow and we have a dinner out! If you’re cooking at home, grill up some chicken and make some Whole30 mashed potatoes and red cabbage salad.
THURSDAY
Excited to be on HoustonLife again today! If you’re in Houston, catch me on NBC at 3 pm. We’re making some healthy variations of guacamole for National Guacamole Day. For dinner, it’s pork carnitas in the slow cooker. I’ll crisp up the shredded meat under the broiler before serving and make a batch of pickled red onions. Serve in lettuce cups or your favorite tortilla.
FRIDAY
TGIF after a busy week! I’m hosting a live masterclass today called Kitchen Reboot. Join me (it’s free!) if you’d like to refresh your kitchen and add a little sunshine back to your dinner routine. We also have a senior college meeting and I’m packaging aprons to ship in the afternoon, so I might just crawl in bed and skip dinner entirely. If I need an easy Whole30 dinner, it will be Buffalo Chicken Wings. Serve with habanero ranch, carrot, and celery sticks on the side.
