Cinco de Mayo Favorites

It’s no secret that I’m pretty much addicted to Mexican food. Growing up in Southern California, we feasted on a balanced diet of Baja-style tacos, chips and salsa. Enter a move to Texas, and I I fell in love with Tex-Mex and all it’s processed cheese-slathered glory. Not to mention Houston’s incredible Hugo Ortega restaurants and their menus full of authentic and fresh Mexican food.
Cinco de Mayo is pretty much my favorite excuse to add yet more Mexican-inspired recipes to the meal plan. When I cook Mexican food at home, I want it to be full of fresh ingredients, simple to prepare and family-friendly (except the margaritas!).
