Easy Dinners for Busy Days
Today was a good day. It was a full day of catching up with an old friend, baking, cooking and making a major mess in my kitchen. Doing things with and for others is one of the things that can bring so much joy this time of year. I hope you all have a peaceful week ahead and I’m sending so much love and hope your way.
SUNDAY
We had a rotisserie chicken and I made the Chicken and Wild Rice Soup from Dinner is Done. I chopped a fennel bulb and added that to the pot with the celery. We also made a quick homemade stock out of the chicken carcass, fennel fronds and leek tops. I love soup on Sunday! It was delicious and comforting after a day of baking and tasting all the treats.
MONDAY
I have butternut squash ravioli and plan to make a simple brown butter-sage sauce. I’ll toss an arugula salad with shaved fennel, chopped almonds, herbs and super simple salad dressing.
TUESDAY
We’re hosting my husband’s company holiday party and it’s a menu straight from my cookbook (plus a Costco hack or two). Watch Instagram stories tomorrow and I’ll clue you in. Also, I’m posting a new recipe for my herb-crusted beef tenderloin on Tuesday, so watch your inbox.
WEDNESDAY
Leftovers for sure! Most likely it will be Aunt Shelley’s fried rice (another book recipe!) with leftover chopped tri-tip and veggies.
THURSDAY

Happy weekend. This turkey chili with beer sounds promising, or make my weeknight chili with ground turkey.
