Here’s What’s For Dinner
SUNDAY
Dinner is cavatappi with pesto and a sidedish of sautéed shallots and peas. I’m using up Trader Joe’s kale pesto that I bought for an “easy dinners” demo. It’s a lucky night when you have everything for a salad of baby arugula, buffalo mozzarella, heirloom tomatoes, reduced balsamic, Old Country Olive Oil and Maldon sea salt and pepper. I highly suggest this menu: It took all of 10 minutes to put together!
MONDAY
I’ve been craving meatloaf ever since a group of friends started texting a string of meatloaf recipes back and forth. Yes, these are the things I text with friends about. I’m trying this healthy Sheetpan Mini Meatloaf recipe and adding Brussels sprouts and small baby potatoes to the pan. Arugula salad with cherry tomatoes, feta and super simple salad dressing on the side.
TUESDAY
Whole Chicken in the Slow Cooker. Add carrots, potatoes, shallots and garlic for an easy veggie side. A spice rub will help add color to the chicken skin if you want to sprinkle on about 2 teaspoons or more when you add the chicken to the slow cooker.
WEDNESDAY
I’m trying out Mississippi Pot Roast with a boneless lamb roast instead of beef. I’ll let you know how it goes! Steamed broccoli and rice on the side. FYI, I’m planning to omit the butter, ranch dressing mix and chives in the linked recipe.
THURSDAY
Today I have a “one and done” class (one pot, sheet pan, etc) for my online cooking school. Join my cooking school for the month and cancel at any time for the Zoom cooking class and six new recipes. Dinner at my house will be one of the recipes from our class!
FRIDAY
My kitchen is closed! Honestly, it’s altogether too hot to cook in Houston. We might just have ice cream for dinner!
