Weekly Meal Plan

Well, summer has officially come to an end. We packed up in Idaho and headed back to Houston, traded fires and smoke for hurricanes and rain. If there was ever a time to start a calming meditation practice, the time is now! One thing that helps keep my stress at bay is having a weekly meal plan, so here we are. SUNDAY
Home in Houston! I’m excited to get back to a real routine. While I’d like to say I’m cooking dinner tonight, let’s be honest, we’re getting takeout. My husband misses his routine of Mexican takeout from El Patio. I’ll make a simple salad to have with our shredded green chicken enchiladas. If you want to make an easy Mexican dinner at home, make enchilada casserole and call it a night!
MONDAY
Meatless Monday for my crew. I’ll make veggie stir fry. Serve with steamed cauliflower rice, coconut cauliflower rice or steamed short grain rice. Sometimes I make veggie dumplings on the side for my kids — don’t get any fancy ideas, I buy these in the freezer section from Trader Joe’s!
TUESDAY
Supposedly the rain is hitting tonight or tomorrow. I’m planning to make a big pot of comforting coconut red curry soup with tender chunks of butternut squash. Add a scoop of leftover rice from last night.
WEDNESDAY
Sloppy joe’s in baked sweet potatoes. Lemon roasted broccoli on the side. Make a double batch of sloppy joe meat if you’d like, freeze leftovers for another dinner down the road.
THURSDAY
One of the first recipe classes in my new online cooking school is a healthier eggplant parmesan with a quick and easy homemade tomato sauce. It’s similar in style to this eggplant involtini, except it’s grilled, stacked and layered with fresh mozzarella and tomato sauce. I hope you’ll consider joining my new cooking class membership! FRIDAY
Pizza night at home! Roll out store bought pizza dough (we use Trader Joe’s brand dough sold in the cheese section) and bake it with leftover tomato sauce from last night, mozzarella and basil. I love adding some dollops of sundried tomato pesto, too! I like to use a ceramic pizza stone that heats up in the oven and creates a crispy/chewy crust.
