SUNDAY
Marcella Hazan’s bolognese is a masterpiece of comfort food. Serve it over riced cauliflower, spaghetti squash or good old-fashioned pasta. Marcella may be rolling in her grave at the suggestion of serving this over anything but good-quality pasta, but do what you will.
MONDAY
Simple roasted salmon, chermoula, broccoli sautéd with red pepper flakes and garlic. We’ll have a salad made from the greens in our garden, and lately I’ve been making a fall version of my Super Simple Salad Dressing with apple cider vinegar instead of champagne vinegar. Chermoula is a North African condiment that is delicious with fish, chicken or roasted vegetables:
4 garlic cloves, minced
2 1/2 cups flat-leaf Italian parsley
2 cups cilantro leaves
Grated zest of one lemon and the juice
1 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
2 teaspoons ground cumin
3/4 teaspoon kosher salt
1/2 cup olive oil
Combine the garlic, parsley, cilantro, lemon zest, lemon juice, paprika, cayenne pepper, cumin and salt in a food processor and pulse on low to a course puree; don’t process until smooth. With the motor running, add the oil in a steady stream until just blended. Taste and add lemon juice or salt if necessary. Store in a tightly covered container in the refrigerator for up to 1 week.
TUESDAY
Slow cooker carnitas, pickled red onions, La Taqueria sauce and pinto beans. When I make my version of slow cooker carnitas, I simply salt and pepper the pork shoulder well and set it on top of a thinly sliced onion and a couple bay leaves. No need for extra liquid, as the pork cooks slowly and falls apart. Buy a large pork shoulder so you can have leftovers for sandwiches the next day.
WEDNESDAY
BBQ pulled pork sandwiches with cole slaw and pickles. Warm the leftover pork from Tuesday with your favorite BBQ sauce (I like Bone Suckin’ Sauce because it’s tangy and not too sweet). Serve on Hawaiian rolls with cole claw and bread and butter pickles.
THURSDAY
We were originally planning on French bread pizzas and salad with jalapeño ranch, but our oldest has a birthday and she has requested sushi! Off we go and we’ll file this dinner away for another night soon.
FRIDAY
Heading to NYC with my girls to meet up with my sister and her girls, but if we were home it might have been these pork burgers from Susanne Goin. Mouth watering. Or maybe this roast chicken recipe which I haven’t tried but which sounds insanely delicious.
