SUNDAY
Slow Cooker Pot Roast for Sunday supper will make your whole house smell delicious. I’ll sub avocado or olive oil for the canola and arrowroot powder for cornstarch.
MONDAY
Book fair family night at our school, which means half my crew will eat at home and do homework while the youngest (and mom) head back to school. Sounds like a night for a Trader Joe’s easy dinner. I’m thinking spinach tortellini casserole (skip the sausage to keep it meatless) or TJs cauliflower gnocchi with Rao’s.
TUESDAY
Cowboy quinoa casserole. I’m following this basic formula, but with a few tweaks. Add a pound of grass-fed beef, sautéed with my homemade taco seasoning. Instead of adding cowboy caviar salsa, I may add a can of drained and rinsed black beans and some fire roasted corn from TJs. Watch stories to see how it all comes together.
WEDNESDAY
Crazy day in our house with everyone going in separate directions. I’m thinking easy Red Beans and Rice that will satisfy everyone in my brood. Frank’s Red Hot on the side. Add something green, like simple greens beans spread on a sheet pan with a little olive oil and roasted at 425 for 20 minutes.
THURSDAY
I’m teaching an evening class tonight, my oldest has a 3pm dentist appointment and then I’m doing afternoon carpool. What can I make at 2pm and leave for my people? Slow Cooker Salsa Verde Chicken will be the perfect make-your-own-taco dinner.
FRIDAY
My oldest daughter and I are running away to NYC for a mother-daughter trip. I am SO excited. We have tickets to Dear Evan Hansen tonight and Waitress tomorrow. I foresee a lot of eating and shopping in our future. All that to say, that my husband is on deck for feeding the younger two. If you’re home and need ideas, head to my YouTube channel. You’ll find tons of recipe videos which are different that what I have on my website. For starters, try my honey hoisin pork tenderloin. Throw it on the grill and call it a night.
