Slow Cooker Pot Roast for Sunday supper will make your whole house smell delicious. I’ll sub avocado or olive oil for the canola and arrowroot powder for cornstarch.
Book fair family night at our school, which means half my crew will eat at home and do homework while the youngest (and mom) head back to school. Sounds like a night for a Trader Joe’s easy dinner. Cowboy quinoa casserole. I’m following this basic formula, but with a few tweaks. Add a pound of grass-fed beef, sautéed with my homemade taco seasoning. Instead of adding cowboy caviar salsa, I may add a can of drained and rinsed black beans and some fire roasted corn from TJs. Watch stories to see how it all comes together.
Crazy day in our house with everyone going in separate directions. I’m thinking easy Red Beans and Rice that will satisfy everyone in my brood. Frank’s Red Hot on the side. Add something green, like simple greens beans spread on a sheet pan with a little olive oil and roasted at 425 for 20 minutes.

My oldest daughter and I are running away to NYC for a mother-daughter trip. I am SO excited. We have tickets to Dear Evan Hansen tonight and Waitress tomorrow.
