Dinner in a Flash
I’m making this super quick! It was a busy weekend and I’m packing up for a trip to Round Top tomorrow. Come visit me at Bader Ranch on Monday from 10 am-5 pm! SUNDAY
My husband was in charge since my oldest and I were traveling back from Santa Fe. Meatballs, penne and Rao’s marinara, and it looks darn good. Salad and garlic bread on the side. The meatballs and garlic bread were purchased from H-E-B, which makes for an easy dinner.
MONDAY
My family is surviving without me because I’ll be in Round Top selling aprons at Bader Ranch. Come visit me! I told my husband to grill sausages (we always have Teton Waters Ranch in the freezer), toss a salad, and roast some veggies. Or he can make sheet pan sausage and peppers for an easy one-pan meal.
TUESDAY
Back home in Houston after a whirlwind 24 hours in Round Top and want something super easy and healthy. Thai red curry veggies for the win. I’ve made this recipe so many times and use whatever random assortment of vegetables I have on hand — half a bag of shredded carrots, some cubed butternut squash, eggplant, any variety of greens. Just use up what you have! I omit the sugar included in the recipe.
WEDNESDAY
It’s a taco bar of shredded chicken tinga, pinto beans in the slow cooker, Mexican rice, and all the taco toppings. Make it into a salad or stuff your tortilla of choice.
THURSDAY
I’ll be out of town again! If you’re cooking, try this farro risotto if you haven’t yet!
FRIDAY
Friday night is usually pizza night at home, leftovers or takeout. Try this idea for 10-minute flatbread pizza or this one made on naan.
