Book Tour Week Dinners!
It’s Sunday night and I’m knocking this out fast. I’m so grateful to everyone who came to say hello at our book events this weekend, thank you! I’m overwhelmed with gratitude for you all. Next week the book events continue, so while I was tempted to skip the meal planning and head straight to bed, I knew a few minutes spent planning would help me get organized for the nights ahead. Quick tortellini casserole, but I’m making it meat-free. Salad on the side!
I’ll be out all day, so I need a crock pot dinner because of book event exhaustion! Lazy slow cooker chile verde is the name of the game. I’m craving sauteed dark leafy greens, so might serve mine of those. Or serve over rice or in tortillas.
Flank steak, cheese bread (this is my husband’s signature move in the kitchen, I will share the recipe one day) and broccolini.
I hope you’ll join me at The Frock Shop today for 20% off shopping, cocktails from my book and a fun book signing from 12 to 2 pm. We’re going out for dinner tonight and celebrating the almost end of a great week.
I have an event with Rooted Garden today and can’t wait to demo two of my favorite salads from the book! We’ll have a kale caesar for dinner topped with rotisserie chicken. I plan to fall over around 8 pm and sleep for 20 hours!
