Super Bowl Sunday
This email goes out automatically on Sunday evening, so by the time you’re reading this the Super Bowl may be long over. But if you haven’t planned your dinners for the week ahead, it’s never too late!
SUNDAY
I don’t want a huge mess since I’m leaving the house Monday morning at 7 am to do a cooking demo downtown. Buffalo chicken wings are super easy, plus tacos for the win. I have some kale to use up, so I might chop up a hearty salad with kale, drained garbanzo beans, pumpkin seeds, tomatoes and shredded cheese. I can make a taco salad with a kale salad base.
MONDAY
Tofu with soy scallion sauce. If you don’t want to pan-fry the tofu, toss it in a little avocado oil and bake at 400 degrees on a parchment paper-lined sheet pan. If you bake the tofu on a sheet pan, it’s also a great way to make a one-pan meal by adding broccoli florets to the pan. If you have my cookbook, the peanut noodles and soy-sesame spinach would be delicious with this.
VALENTINES DAY
I love Valentine’s Day dinner at home. Make lamb ragu or French Dip sandwiches or grilled ribeyes. But definitely make a chocolate dessert.
WEDNESDAY
My Basics I class is working on stews, grilled meats and vegetables. I’ll do a quick Instant Pot dinner of chicken tinga. Serve in a bowl over cauliflower rice with cilantro, pickled jalapeno and guacamole.
THURSDAY
Sheet pan eggplant parmesan sounds like a genius idea!
