SUNDAY
Since I’m headed to the Taylor Swift concert, the boys in my family are on their own! I have some cabbage and leeks to use up, so if I’m motivated early in the day I’ll make this soup.
MONDAY
Farro risotto with asparagus is just what the doctor ordered; you can also follow an Instant Pot method and add asparagus to the mix. Or make my recipe for summer farro risotto.
TUESDAY
Today’s private French-themed cooking class includes some of my favorite recipes. Tonight is busy with a school meeting and a dinner out for me with other softball moms. Taco Tuesday is the answer. Make a bowl with cauliflower rice as the base if you want to forgo the tortilla.
WEDNESDAY
We have another birthday in the family today, and a very early morning to get a permit! Dinner is sushi and miso soup. My friends from Just One Cookbook also have an amazing miso soup recipe. If you want a side salad, this dressing is lights-out amazing. We’ll do a simple birthday cake, you can also make a boxed yellow cake mix and add Hershey’s frosting on top. I use better quality cocoa, but follow the recipe linked from Hershey’s. It’s the easiest!
THURSDAY
Today I have an online class with my cooking school membership today. Join us for the month and cancel at any time. We’re making simple one-pot/one-pan meals:
