Our weeknight dinners are super simple this week, and most of our meals can be put together in about 15 minutes. During the day, I’ll be in the kitchen developing new recipes for spring menus (think peas, leeks, asparagus) and photographing recipes to post on the site. I have a couple fun collaborations with other food writers and bloggers coming up in April and May, and I can’t wait to share the recipes. There are hundreds of easy weeknight dinner recipes on my computer and I am itching to post, but I don’t have the photography skills to easily capture good quality photos on the fly. I’m enlisting pros for the time being, and asking a lot of questions in the meantime. MONDAY
Super fast miso soup with baby bok choy and veggie sushi. I’ll make steamed short grain sushi rice (we have a rice cooker that works hard for the money) and let everyone pick their own sushi fillings (julienned carrots, cucumber, avocado or green onions). To make life easier, purchase pre-made veggie sushi and make the soup (which I promise will take 15 minutes max).
TUESDAY
20-minute tomato soup, orzo with pesto and green salad with super simple salad dressing. The soup recipe is from Gimme Some Oven — it’s similar to one I often make, except I don’t use dried herbs (once you make this a couple times, you don’t need a recipe). If you don’t have fire roasted tomatoes, just use regular good quality canned Italian tomatoes. On the side, we might have gluten-free mozzarella and pesto grilled cheese, or it might be orzo with pesto. I’m making a big batch of pesto today so I can share the recipe with you all — it’s one of those sauces you should have in your back pocket.
WEDNESDAY
Grassfed beef chili. This is a family favorite that we’ve slightly tweaked over time. We like our chili on the meaty side, so this one has a fair amount of ground beef. You can use kidney beans or chili beans, whichever you prefer. And it’s completely fine to substitute ground turkey. Make a double batch and freeze half, you can thank me later.
THURSDAY
Gluten-free weeknight lasagna. I’ll be using my favorite easy lasagna recipe, but switching out regular lasagna sheets with gluten-free Capellos sheets. We have some new leaves of arugula to harvest from our garden, so planning arugula salad on the side.
FRIDAY
Leftovers! A big pan of nachos covered with chili, cheese and green onions.
