Now, what are we going to cook for dinner this week?
SUNDAY
I’m cooking for Marie Flanigan and her team tonight at Kitchenette Farm, our teaching kitchen outside of Round Top, Texas. My family is fending for themselves! I have a feeling it will be Mexican takeout, but if you want an easy dinner in that same flavor profile, make this.
MONDAY
My sheet pan class begins! One of the recipes we’re making today is breakfast-for-dinner chorizo taquitos. They are DELISH! There’s nothing wrong with an easy egg skillet for dinner. This one is on my list to try.
TUESDAY
I’m teaching sheet pan fish recipes in class today, which I’m excited to gobble up for lunch. I’m making pesto to use in parchment paper fish packets, so I’ll use leftover sauce for an easy pesto pasta dinner. Serve a salad tossed with super simple salad dressing and your work is done.
WEDNESDAY
Smash burgers are a request from the fam, and why not?! We make ours in a cast iron pan — and there’s no cheese better than melty (and uber processed) American slices here. Making red cabbage salad on the side.
THURSDAY
An easy (and healthy) dinner to the rescue. Chana masala comes together super fast. Serve it with rice or cauliflower rice and top with a dollop of plain Greek yogurt and cilantro. YUM!
FRIDAY
We’re headed to Kitchenette Farm for Easter weekend! Enjoy your families, friends.
