Easter Bruch Menu Ideas
It’s time. Easter brunch is upon us, and I’ve been fielding lots of texts and questions about my Easter menu. While I want to give you ALL the ideas, I also don’t want to suggest that anyone should be making all of these. I’ve given you TONS of ideas to work with, and just narrow it down to a doable menu that works for you. Get creative with what you have on hand, and don’t feel like you need to make everything homemade. I hope you and your family enjoy Easter weekend, and while it may be a smaller gathering than usual the celebration is still the same.
Quick Breakfast Ideas
In the morning before online church (never thought that would be such a regular part of our vernacular), we’ll want a quick unfussy breakfast. I teach prosciutto egg cups in classes all the time, and students are always amazed at how simple they are. I don’t have prosciutto, but I do have thin slices of ham I could substitute. I’m also thinking of trying this recipe with kale or spinach lining the muffin tin instead.
Simple Scrambled Eggs
This video shows my basic technique for good scrambled eggs. Sure, you can add milk or cream to make them richer, or crumble in feta, goat cheese or any kind of cheese you prefer. Sometimes I just like this quick and simple version instead.
Big Batch Hard Boiled Eggs
I also have a video for how to make hard cooked eggs in the Instant Pot, which could come in handy if you plan to dye eggs or make deviled eggs. And if you do, make my deviled green eggs. They are SO good!!!
Overnight French Toast
This probably won’t happen in my house, but it may work for you! I don’t want to use a whole loaf in a French Toast casserole. But I love the idea that it can be made the night before!
Puff Pastry Tart
I happen to have a bunch of puff pastry in my freezer from cooking classes, and gruyere in my fridge. This vegetable puff pastry and pesto tart looks delicious. This one is more like a cross between quiche and a tart, and this one with zucchini and corn looks delish! My plan is a rectangular puff pastry tart filled with shredded gruyere, caramelized onions or leeks, asparagus and thinly sliced zucchini. Top with thyme, oregano or chives if you have them and bake at 350 for 30 minutes on a rimmed sheet pan.
Quiche
Easter is definitely the perfect day to serve quiche. Make the tart dough the night before, or use a frozen pie shell. I love deep dish quiche made in a springform pan, and one of my favorites is from Smitten Kitchen but it’s a little too labor intensive for my current level of cooking energy. This is another good quiche recipe and if you don’t have heavy cream just use milk! Last but not least, this Food52 version looks incredible. What are your favorite quiche recipes? I’m on the hunt for one with a super custardy interior.
Frittatas
If you have any eggs left over after dying and deviling, make a frittata! Low carb, easy and fast. I have a Whole30 BLT frittata that’s healthy and fast, and if you want to make it richer add goat cheese, feta, gruyere or almost any kind of cheese you have on hand. Here’s another easy frittata option.
Salads
There are endless options here, but some of my favorites would be weeknight caesar, kale and shaved Brussels sprout salad or spinach salad with pesto and peas. In spring, I also love a salad with a ton of colorful radishes shaved on top. I also have a strange craving for macaroni salad, which would be a tasty side dish with ham. Or you could make the three bean salad I posted recently!
Side Dishes
These slow cooker mashed potatoes sound amazing. I may adapt them for my Instant Pot since I’ll have ham in the slow cooker. It’s all appliances on deck this Easter! I love the combo of miso and carrots, or these roasted carrots with carrot top pesto would be delish. Or honey roasted root vegetables would also be a good call.
Main Event
I’m either making a slow cooker spiral ham with my own glaze or Greek lamb. If you make the ham, throw away the glaze packet and make mine. It’s so simple:
- 1/4 cup honey or maple syrup
- 1/4 cup brown sugar
- 1/4 cup apricot, fig or raspberry jam
- 1/4 cup any type of mustard
- 1 tablespoon of horseradish (optional)
Dessert and Bread
I really, really want to make hot cross buns but not sure if it will happen. I’d also love to make carrot cake. I might opt for these healthy carrot cake muffins instead. Other desserts that might work well are berry crisp, strawberry galette or lemon olive oil cake.
