Weeknight Dinners for the Win
It’s a busy week around here! Cooking classes, college trips, middle school back-to-school night. Here’s what you need to know:

Here’s what the Smart fam is eating this week. Hope you’re all healthy, happy and sharing dinner with the ones you love.
SUNDAY
We’re taking our Yellowstone buddy, who is now a junior in high school, to get some new football gear. If any of you who are local to Houston have questions about being a Yellowstone shepherd, please email me and I can share our experience. Dinner will be a freezer staple that’s always on hand, tortellini casserole, maybe with 4 cups of greens instead of 2. I don’t have Italian sausage thawed and don’t like braving the grocery store on Sundays, so it will be a meatless version.
MONDAY
We’re having kale and pistachio pesto that I made last weekend. To make it, follow my any greens pesto and just use kale and maybe a handful of basil if you have it. I used this last Friday to top smashed potatoes as an appetizer, and it was delish. Toss the pesto with spaghetti squash, use it in a caprese sandwich with fresh mozzarella and good sliced tomatoes or with cooked orzo. It would also be delicious sprinkled on store bought pizza dough with a little tomato sauce and mozzarella.
TUESDAY
Register for my online cooking class with Memorial Hermann! Once you sign up, you’ll receive a link to the recipes as well as access to the Memorial Hermann database of healthy dinner eats! We’re making healthier ground beef taquitos, chipotle cauliflower and three bean and butternut squash chili. I’ll share tons of knife skills and prep tips to make these recipes go even faster!
WEDNESDAY
Ground chicken lettuce cups for the win. A long time family fave.
THURSDAY
Headed to check out Boston College and Boston University with my oldest. I’m leaving the freezer stocked with some of my favorite cheater dinners that my family can warm up on a whim.
FRIDAY
On my Smart in the Kitchen private Facebook group, I asked everyone what their favorite “too tired to cook” dinners are. I’m compiling some awesome responses in a blog post soon! What’s your go-to dinner that you can cull together from freezer or pantry ingredients with minimal chopping and prep?
