Dinner (Plan) is Done!
I’m a day late with this week’s meal plan, apologies friends! It was a busy weekend and I opted for a relaxing dinner out with my family and a binge of All the Light You Can Not See on Netflix. It was so beautiful and a timely watch. Always look for the light, and try to BE a light for others. This might sound naive, but I think small acts of kindness can add up to make a big change or shift in our collective consciousness. At least I hope so.

MONDAY
It was a full day at our school book fair, so I wanted a quick brainless dinner. I know you’re here because you love to cook, but sometimes you just need an easy, 5-minute dinner, right? We’re doing Salsa Verde Chicken in the Instant Pot. I’ll have mine over greens with guacamole and my kids can make tacos.
TUESDAY
I’m making turkey bolognese following my Lamb Ragu recipe. Serve it over roasted vegetables, polenta or pasta.
WEDNESDAY
I’m making this easy Zuppa Toscana in the Instant Pot, but you could easily make it on the stovetop. If you don’t have kale, make this with Swiss chard, spinach or collard greens. I plan to skip the cream, even though it would be delicious. Maybe I’ll add just a little, we’ll see!
THURSDAY
We have a corporate cooking event tonight, so my family is on their own for dinner. We are making some of my favorite appetizers for the holidays and a recent favorite cocktail, a Pomegranate Paloma with a honey simple syrup. I like it almost as much as my Cranberry Margaritas!
FRIDAY
If you’re cooking at home this weekend, why not take it easy and grill burgers or kabobs. Or just make a big salad that’s full of protein!
