MONDAY
Meatless Monday is happening — we need to pay for all the chocolate and jelly beans. On deck: Veggie stir fry with ginger, garlic and Tamari with steamed rice and edamame on the side. There are plenty of recipes online for stir fries, but you really don’t need one. I like to sauté veggies and green onions in some avocado or coconut oil and add ginger and garlic to the pan. (Use a teaspoon to peel the skin off your ginger and a microplaner to grate the ginger.) Watch the garlic to make sure it doesn’t burn. Season the vegetables with coconut aminos, tamari or low-sodium soy sauce and serve over steamed rice or cauliflower rice. Top with sesame seeds and freshly diced green onions.
TUESDAY
Easy sheetpan roasted salmon with lemon and olive oil. I’ll add some diced zucchini and cherry tomatoes to the sheetpan for an easy dinner with minimal clean up. Salad with super simple salad dressing. I’ll have the salmon recipe on the website soon.
WEDNESDAY
Make-your-own tomatillo chicken taco bowls with rice, guacamole, beans, shredded lettuce, cilantro, chopped red peppers and jalapeños. This is embarrassingly easy. Check out my Instagram stories on Wednesday and I’ll walk you through it. It will entail opening a jar of Trader Joe’s Salsa Verde and plugging in your slow cooker. I have faith you can pull it off.
THURSDAY
Asian lettuce cups with ground pork, diced carrots, green onion, ginger, soy (or tamari or coconut aminos) and sesame oil. I may add some riced cauliflower to the ground meat mixture to add more vegetables and make it a one pot meal.
FRIDAY
It’s Friday…mom and dad OTD. Kids likely having something super gourmet like gluten free pasta and Rao’s marinara or leftovers. Happy weekend!

Marcia- I have purchased cauliflower rice but never know what to do with it besides sauté it in a pan with coconut oil and spices. Do you have a recipe that you love to make with cauliflower rice? Maybe on the Whole 30 side?

You can use it for Asian fried rice, in tacos, chile, etc. I usually sauté, then add some chicken stock to soften.
