Super Bowl and Valentine’s Day Dinners
I’m jumping right in tonight because it’s the Super Bowl and we’ve got things to eat and football to watch. Hope you all had a great weekend!
Super Bowl! I mentioned our menu in an Instagram post last week, but we finally narrowed it down. BBQ pork ribs, buffalo chicken wings, homemade ranch and veggies, seven-layer dip and cole slaw. I put out the veggies and ranch first while I was cooking in hopes that my family would fill up on something healthy.
Happy Valentine’s Day! We made this chocolate bark in a cooking class yesterday and added tons of toppings: crushed freeze dried strawberries or raspberries, crushed pretzels, mini marshmallows, popcorn, sea salt and more. Or make this almost flourless chocolate cake, hazelnut chocolate truffles or chocolate fondue. For dinner, I’m making heart healthy salmon, chermoula, caesar salad, and steak fries.
I had two cooking classes and the Super Bowl on Sunday plus lots of cooking Monday for Valentine’s Day. To take a break from cooking, I thawed two quarts of frozen veggie chili for dinner tonight. My kids like their chili with a scoop of steamed rice and all the toppings (cheese, cilantro, pickled jalapeños, etc). A kale salad would be good on the side. But then again, Fritos could be good on the side. Choose your own adventure.

It’s my birthday. I don’t really want to announce it, but I’m mentioning it only because I want to share that I’M NOT COOKING! We’re headed out to dinner with kids to celebrate. And since we don’t have school Friday, my kids will really be celebrating.
