February is Here!
I’m getting organized for a meal planning zoom with my Smart Meal Plan Formula students. We will talk about how to store produce so it lasts longer and how to make a grocery list that gets you through the store in 30 minutes flat. I’m also sharing this article that I just read about saving money on groceries through meal planning. I could have written something similar! If you have downloaded my free workbook Meal Plan Like a Pro, it’s a great place to start. It walks you through how I meal plan in a way that isn’t overwhelming or too time-consuming. If you missed my recent post on Blackberry Cornmeal Upside Down Cake, I recommend you check out the recipe and make one this week! I love an excuse for leftover dessert with coffee in the morning.
SUNDAY
My husband is heading to his favorite Mexican market, La Michoacana Meat Market, to get pre-marinated meats to grill, salsas and sides. The Grammys are on and we’ll probably have tacos on our laps while listening to performers. We have tired teenagers tonight after a busy weekend! Try this La Taqueria sauce for tacos, it’s so easy to blend into a hot sauce and keeps in your fridge for a week to ten days. It’s great on scrambled eggs or quesadillas, too.
MONDAY
I have a medical procedure today (don’t worry, just routine “getting older” stuff) and want something hands-off and easy. Whole Chicken in the Crock Pot with a spice rub on top is just the thing. I’ll add a quartered onion, carrot slices and fingerling potatoes. I have some of the spice rub from this flank steak recipe that I’ll use on the chicken.
TUESDAY
Perini Ranch tenderloin for the win. We had one in our freezer that I moved to the fridge on Sunday. I’ll let it come to room temperature and serve with rolls (for anyone who wants to make a sandwich) and a shortcut caesar salad. I’ll have a steak caesar and call it a night!
WEDNESDAY
Quick lamb ragu for an easy fan favorite. It would be delicious with creamy tomato orzo or spaghetti squash or sauteed zoodles if you’re watching carbs. My basics class today is on chicken and fish and we’ll have a LOT to cover, but I can’t wait.
THURSDAY
We have a fun night out, so no dinner will be made here! What about a cozy dinner of pasta fagioli?
FRIDAY
I’m prepping for a cooking demo at the Four Seasons on Monday for a conference! It will be a busy and short week ahead, with Valentine’s Day in the mix. Here’s an older post with ideas for Super Bowl and Valentine’s recipes! I plan to have pancakes and strawberry-banana smoothies for my teenagers on Valentine’s Day, even though they usually leave the house in such a rush that they hardly eat.
